Tempeh Chicken-less Salad

Ingredients:

  • 1-8 oz. package tempeh, chopped into 2-inch chunks
  • 1/4 cup walnuts, chopped
  • ½ red onion, diced
  • 2 tbsp raisins
  • 1 tbsp apple cider vinegar
  • ½ cup veganaise
  • Salt and pepper to taste
  • Whole grain bread, crackers, or salad greens for serving

Instructions:

  1. Mix dry ingredients in a large mixing bowl.  Add vinegar and veganaise and stir until well-combined.
  2. Serve on bread, crackers, or over salad greens.
