Chopped Greek Salad

Ingredients:

  • 2 cans chickpeas, rinsed and drained
  • 1 cucumber, chopped
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, chopped
  • ½ red onion, diced
  • ½ cup pitted kalamata olives
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Zest and juice of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions:

In a large bowl, combine chickpeas, cucumber, tomato, pepper, onion and olives. In a separate bowl, whisk together oil, vinegar, lemon, oregano, basil, salt and pepper. Add dressing to salad and toss until well-combined.
