Pico de Gallo with Avocado

Makes about 2 cups

Ingredients:

  • 2 Haas avocados, ripe, cubed
  • 4 Roma tomatoes, seeded and chopped
  • ½ small red onion, chopped
  • 1 jalapeno pepper, seeds and ribs removed, diced
  • 1 small bunch cilantro, chopped
  • 1 tbsp olive oil
  • 1 tsp cumin, ground
  • Juice of half a lemon and lime
  • Salt to taste

Instructions:

Combine all ingredients in a medium bowl and stir gently to combine. Adjust salt and lemon juice to taste.
