Cinnamon Maple Roasted Chickpeas

Ingredients:

  • 1 can chickpeas, rinsed, drained, and lightly dried between 2 sheets of paper towel
  • 2 teaspoons canola oil
  • 2 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 ½ tablespoons maple syrup

 

Instructions:

  1. Preheat oven to 400F and line baking sheet with parchment paper.
  2. Add chickpeas, oil, cinnamon, nutmeg and salt to mixing bowl and toss until well combined.
  3. Spread chickpea mixture in single layer on baking sheet and bake for 40 minutes.
  4. Remove chickpeas from oven and drizzle with maple syrup.
  5. Return chickpeas to oven and bake for an additional 5 minutes. Allow chickpeas to cool before serving.
