Ingredients:
- 2 Grapefruits, segmented (or Blood Orange if trying to avoid grapefruit)
- 1 avocado, diced
- ½ c asparagus, cut 1 inch pieces
- ½ c purple cabbage, shredded
- 2 c Kale, chopped small
- 1 ½ pounds parsnip, peeled
- ½ c parsley, fresh, chopped
Dressing:
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp white miso paste
- 1 tbsp lemon juice
- ½ tbsp ginger, freshly grated
- 1 tsp poppy seeds
