No-Egg Salad Sandwiches
Makes 8 sandwiches


Ingredients:

14 ounce package firm tofu, drained well and mashed

2 green onions, thinly sliced 

¼ cup dill pickles, chopped

¼ cup canola mayonnaise

2 Tbsp yellow
mustard

1 Tbsp tamari
soy sauce

½ tsp cumin

½ tsp turmeric

½ tsp garlic powder

 

16 slices whole grain bread

8 lettuce leaves

8 tomato slices


Instructions:
  1. Combine tofu, onion, and dill pickles. 
  2. Mix together mayo, mustard, soy sauce, and spices in
    separate bowl then stir into tofu mixture. Adjust seasonings if necessary.
  3. Serve on whole-grain bread with lettuce and sliced tomatoes.
