These brownies are loaded with essential fatty acids, fiber,
and protein that all work to control the release of sugar into the blood. These
also are more fudge like consistency.
Black Bean Brownies with Walnuts
Ingredients:
1, 15-oz can black beans, drained and rinsed very well
2 tbsp cocoa
powder (add a little extra if desired)
1/2 cup quick oats
1/4 tsp salt
1/3 cup pure maple syrup or agave
2 stevia packs
1/4 cup coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup walnuts
Instructions:
- Preheat oven to 350 F.
- Combine all ingredients except the walnuts in a good food
processor, and blend until completely smooth, 2-3 minutes (A blender can work
if you absolutely must, but the texture—and even the taste—will be much better
in a food processor.) - Pour into an oiled 8×8 pan. Mix in the walnuts. Optional:
sprinkle extra walnuts over the top. - Cook 15-18 minutes, then let cool at least 10 minutes before
trying to cut. Makes 9-12 brownies.
