Serves 10
2 packs (8 oz.) Seitan medium sliced
4 cups broccoli florets
2 cups snow peas
2 cups carrots julienne
½ green pepper julienne
½ red pepper julienne
½ yellow pepper julienne
1 large shallot finely chopped
3 Tbsps olive oil
1 ½ tsp sea salt
· Marinade seitan in ½ cup shoyu (soy sauce) and ½cup water and 4 cloves of
minced garlic (mix garlic into shoyu).
· Sauté shallots in oil; add broccoli, carrots, and snow peas. Cook for 10
minutes on high heat, then add bell peppers.
· In separate sauté pan place seitan in tsp of oil and cook for 10 minutes
on low heat.
· Combine seitan and sautéed vegetables; place on platter and serve.
