Lemon Cream with Berries

 Ingredients:

1 tablespoon lemon zest
¼ cup   fresh lemon juice
1/3 cup Agave Nectar
12 ounces firm or extra-firm silken tofu, drained
1 cup fresh berries

Directions:

Combine 2 ½ teaspoons of the lemon zest, lemon juice, Agave, and tofu in a food processor.

Puree ingredients until smooth, scraping down sides of the food processor as necessary.

Divide lemon cream evenly among 4 bowls or serving glasses.  Garnish each portion with blackberries and reserved lemon zest.  Serve immediately or refrigerate.
