Nutritious and Delicious Holiday Kale Salad

For The Salad:

1 large bunch of kale or 2 small bunches, tough ends removed and cut into bite-sized pieces (about 8 cups)

3/4 cup pecans

2 medium apples, diced

3/4 cup pomegranate seeds

8 green onions, thinly sliced

Salt and pepper to taste

 

For the dressing, mix together:

1 clove of garlic, grated or finely chopped

1/2 teaspoon kosher salt, plus more to taste

2 tablespoons apple cider vinegar

1/2 cup tahini

1 1/2 tablespoons maple syrup or honey

2 tablespoons olive oil

Black pepper, to taste

1/4 water, more or less, as needed
