Ingredients:
- Refried Beans *Be sure they say vegetarian on them or they will have lard.
- Black beans
- Fabulous Walnut Taco meat * Recipe Below
- Spicy Sour Cream –See recipe below* and mix in cumin, chili powder, and red pepper.
- Guacamole
- Lettuce and Onion
- Tomatoes topped with chives
Instructions:
Layer each ingredient one on top of the other in order. See recipe for Taco “meat” below.
Spicy Sour Cream
Ingredients:
- 1 cup cashews, soaked over night
- 1 tbsp lemon zest
- ¼ cup lemon juice, more or less depending on flavoring
- Salt to taste
- Water to texture
Instructions:
Soak cashews over night. Drain the water and put into food processor with lemon zest and juice. Blend until smooth. Add water and salt as needed.
Taco “Meat”
Ingredients
- 1 c walnuts
- 1 tbsp lemon juice (about half a lemon)
- 1 tsp Braggs aminos
- 1 tsp cumin
- 1 tsp chili powder
- Pinch of salt
Instructions:
- The walnuts will can be soaked for 4-8 hours to soften. This also helps break down the acids making the nuts easier to digest and absorb the minerals. Just water high enough to cover the walnuts and a pinch or 2 of sea salt. (I preferred not soaking, walnuts are a soft nut as is.)
- After the walnuts have soaked 4 or so hours, drain and rinse. Grab your supplies: Braggs aminos, Cumin, lemon, and chili powder.
- Simply pulsed them in the food processor with a half lemon and 2 squirts of Braggs, and the seasonings, to taste if needed. You can do a taco seasoning packet if you’d like. Option: Add red pepper flakes
