These cookies are treats filled with tricks to make them healthy. Oats are a good source of Beta Glucans, a key nutrient in boosting immune function. All-purpose flour has been replaced with whole-wheat pastry flour, a light, whole-grain alternative. The cookies are naturally sweetened with Agave Nectar and some of the fat has been replaced with applesauce, for a moist, tender treat. Tart Cherries provide a boost of melatonin, antioxidants and help reduce inflammation.
Ingredients
2 cups old fashioned rolled oats
¾ cup + 2 Tbsp. Whole Wheat Pastry Flour
½ teaspoon baking soda
½ teaspoon sea salt
1 teaspoon cinnamon
½ cup Agave Nectar
½ cup unsweetened applesauce
¼ cup canola oil
1 ½ teaspoons vanilla
½ cup tart cherries, chopped or chocolate chips
Directions
- Preheat oven to 325°.
- Combine oats, flour, baking soda, salt and cinnamon in a medium bowl. Mix well.
- In a large bowl, combine agave, applesauce, canola oil, and vanilla. Mix until well blended. Add oat mixture to wet ingredients. Stir until dry ingredients are moistened. Stir in cherries.
- Using cookie scoop or teaspoon, space cookies approximately 1 inch apart on cookie sheet that has been sprayed with non-stick spray or lined with parchment paper. Bake 10-11 minutes, until top of cookies are dry to touch. Do not overbake!
- Remove from tray immediately and let cool.
